Ingredients
1 cup oats
1 cup almond milk (or any nonfat milk)
1 cup whole wheat flour
2 egg whites (or 1/3 cup)
1/2 cup applesauce
1/2 cup dark brown sugar
1 tbsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
1 tbsp cinnamon
1 tbsp brown sugar
1 tbsp oats
Cooking Directions
1) Preheat oven to 400°
2) Add almond milk, cinnamon, and vanilla extract to the oats and let soak for 10-20 mins
3) Mix flour, sugar, baking soda, baking powder, & salt
4) Add the dry ingredients to the oat soak
5) Add the applesauce
6) Add the egg whites
7) Mix
8) Spray muffin tin with nonstick cooking spray
9) Spoon mixture into muffin tins
10) Sprinkle cinnamon, sugar, and oats on top of each
11) Bake for 15-20 mins
Makes 12 muffins
If refrigerated or frozen, put in microwave for 15-30 seconds and enjoy anytime!
